Between writing and promoting for two blogs, finding time to travel while working full time, and maintain a social life, I’m a person that is ALWAYS on the go. This is not a new thing for me either. Much of my college life was being in school or working at my 2 or 3 part-time jobs. Even if I had breakfast or lunch earlier in the day, there were occasions when I needed a quick snack. My all-time go-to was Kellogg’s Pop Tarts. They come two in a pack, but one was always sufficient to keep me awake during those long classes.

Fast forward five years later and I am still a busy bee, but more conscious about what (and how much) I eat. I sometimes leave Special K or Nutri-Grain bars that I purchase from my local Target at my work desk. The calorie counts are pretty low (between 90 and 120 calories depending on the bars purchased), they’re filling and taste good.

A quick and easy on-the-go snack is an Apple Jacks parfait. I found this recipe online and slightly modified it. It can be a good snack for family road trips or an after school snack for the kids. The Apple Jacks parfait is a good mixture of fiber, whole grains, fruit, and dairy.
Prep Time: 5 minutes Total Time: 10 minutes Servings: 2
Ingredients:
- 1 cup low-fat vanilla yogurt
- 1 1/2 cups Kellogg’s® Apple Jacks® cereal
- unsweetened applesauce
- raisins

Directions
- In two parfait glasses or clear glasses, layer the yogurt, Kellogg’s Apple Jacks cereal, applesauce, and raisins.
- Repeat layers until glass is full
Serve immediately

What is your favorite on the go snacks for travel, work or school?
I read this and laughed because my son said “Ewww nobody would eat that mommy.” I think it would be good without the apple sauce though. Those part tarts do come in handy when you need a pick me up.
I tried Mott’s apple sauce the first time and it was TOO sweet. It does taste good without the apple sauce too. Thanks for stopping by.
