Earlier this year, I made a 30 before 30 goal to cook more. Sunday dinners are always in my apartment, but I barely even make a salad most days. Since I spent Valentine’s Day alone, I took the initiative to stop being lazy and make dinner for myself. If you’re into 30-minute meals, here’s a quick and easy rotelle pasta recipe with pre-packaged shrimp and Alfredo sauce
Ingredients
- Medium sized shrimp (I chose the SeaPak brand and purchased extra pre-cooked, deveined shrimp later on)
- 1 box of Rotelle Pasta
- 1 jar of Alfredo Sauce (you can also make the Alfredo sauce from scratch)
As you can see, I bought the generic Stop and Shop branded pasta and Alfredo sauce for this rotelle pasta recipe. I personally don’t see a difference in taste, but the price is a big difference (couldn’t beat .89 cents a pack). I cooked the rotelle pasta according to the package directions, drained the water and emptied the contents into a bowl when it was fully cooked.
Cooking the shrimp using SeaPak Shrimp Scampi was super easy. Since it was pre-seasoned, I made the shrimp scampi and added the Alfredo sauce after it was fully cooked. It took about 10 minutes for the butter to melt and after seasoning, I added the extra shrimp into the mixture.
When everything was done, I added some mixed vegetables to my plate just so I can look like I’m eating healthy. 🙂 I’ve since seen a recipe for Cajun Shrimp Alfredo. I think the next time around, I’ll be making it.
